Three great wines end up 2019 properly

This December we offer you a selection that can accompany these Christmas days to perfection. It is a varied selection that includes two wines, a white and a red and a very special sparkling wine, all of them of great renown and recognition. The white wine is the Luar do Sil sobre lías of the Galician region of Valdeorras. The winery, located in Seadur, in Ourense, is a Pago de los Capellanes project, the well-known winery of Ribera de Duero. The wine, 100% elaborated with godello, a local variety, has the peculiarity of maturing for six months over its lees with a process of "batonnage" sustained throughout that period. It is a delicate and silky wine, great for fish and seafood. The red wine is Ferrer Bobet 2016, a classic Priorat made by Raul Bobet in the cellar co-owned with Sergio Ferrer in Porrera. This wine has been awarded the "Great Golden Vinary" which is the highest distinction awarded by these prestigious awards in the wine sector in Catalonia. Wine is a multivariate coupage where Carignan, Grenache, Cabernet Sauvignon and Syrah combine perfectly after a traditional fermentation process in wood deposits and subsequent ripening in French oak barrels for twelve months. An elegant, warm wine that will improve in a bottle. The third wine is a singular cava. We Talk about Mestres Clos Nostre Senyor 2010. It is a Gran Reserva cava made from the traditional varieties of the region, Xarel·lo, Macabeo and Parellada with the peculiarity that all of them are planted in the same vineyard. The base wine that will give rise to the cava rests a few months in chestnut barrels and subsequently makes the second fermentation in a bottle to rest in rhyme for more than 80 months. To properly taste this cava you have to open it in advance, at least half an hour, leaving it in a bowl with ice. It is a cava that should be taken during a meal rather than as an appetizer or dessert.
