Three "must" in Cava Gran Reserva

This December we present a selection of six bottles of cava “gran reserva” from three of the most acknowledged wineries in the region of cava. Specifically, the wineries ars Gramona Llopart and Mestres, all three located in the very center of the denomination in San Sadurní. This three Cava caves ask for patience to be tasted. We strongly recommend opening the bottles some time before the consumption since the long ageing process that they have experienced require a prior oxygenation The evolution is then formidable. The first is the Gramona III Lustros Gran Reserva Brut Nature 2007, with 96 months of aging in bottle, made of xarelo made primarily (75%) and complemented with Macabeo from a single vineyard with biodynamic farming. The cava, despite its age, keeps a pale golden color and fine bubbles perfectly integrated into the wine. The palate is all softness, delicacy and intensity while stressing itself long aging notes. Completely dry its sugar content is less than 3 grams per liter. The second cava, in alphabetical order, is Leopardi Gran Reserva Brut Nature 2010 from Cava Llopart. Aged 48 months at least and mainly based upon Macabeo and Xarelo grapes, complemented with Chardonnay and Parellada. Cava is made from an assemblage of the best varietal wines from the cellar. Completely dry, the sugar content is less than 2 grams per liter. The palate is lively, cheerful but denotes maturity and aging notes. The third is Visol Gran Reserva Brut Nature 2010 from Cava Mestres. Its origin dates back to 1945 when Josep Mestres Manubens, became the first “cava maker” that decided not to add dosage liquor at the time of disgorging. The champagne is a blend of traditional Xarel·lo, Macabeo and Parellada with slight predominance of the first variety. Its uniqueness is ageing of the wine base in chestnut casks for six months. Because of his long maturing period, over 50 months in bottle, you will find a very complex wine of intense yellow color, perfectly integrated fine bubbles and with a wide range of aromas and tastes.
